Corn on the cob is loved by all especially the roasted ones during monsoon..How bout Corn on the cob in a gravy form..The sweet coconut milk ,the blend of spices and the corn together make a wonderful gravy..do give it a try..
Ingredients:
2 corns boiled in salted water.
1 cup fresh thick coconut milk
1 cup thin coconut milk
3 -4 tbsp fresh scraped coconut
4-5 Kashmiri dry chillies
a pinch of turmeric powder/haldi
1 tbsp coriander seeds/dhaniya
1 tsp cumin seeds /jeera
4-5 garlic cloves.
1 tsp tamarind
1 tbsp oil.
salt to taste.
Method:
Boil the corns and cut into 3.
Grind the grated coconut ,red chillies ,coriander and cumin seeds and garlic ,tamarind to a fine paste.
In a vessel heat oil add the ground paste and fry for 5 minutes on med heat.
Then add the thin coconut milk ,the corns and mix well and bring it to a nice boil.
Check for salt add if needed.
Lastly add the thick coconut milk and simmer for about 4-5 minutes.
Serve hot with steamed rice /Hand breads /Neer dosa.
