Caramel Bread Pudding

I grew up eating this pudding Its been my favourite since childhood .This was  staple in my house during school days I use to come home after school and Mom use to keep it ready .I loved to eat it while its still warm .
This time i have added some colour to the pudding .However  its upto you to keep it as it is.This is simple recipe which can be done on stove top/pressure cooker. You could even check this yummy choco chip bread pudding which I posted earlier
Ingredients:
4 loaves/pav or 8 bread slices( a day old will work fine)
1/2 litre full cream milk
6-8 tbsp sugar
2 eggs *
dry fruits as needed (i used finely chopped almonds)
1 tsp vanilla extract
1tsp butter/ghee
for the caramel
3-4 tbsp sugar


Method:
Cut bread into pieces.

Boil the milk add the bread pieces,sugar and keep aside for 20 -30 min .

Meanwhile beat the eggs till creamy .

Add the essence,eggs mixture ,ghee/butter,nuts to the milk.

Grease the mould in which you are going to make the pudding add 3 tbsp sugar to it and keep it on very low flame till it turns light brown.

Carefully till the mould to let the caramel coat it from all sides.

Pour the prepared milk -bread mixture in the mould.

I just put few drops of green colour and stirred it well from top if you like colourful puddings you could mix the colour in the milk mixture itself .

 Steam the pudding in the pressure cooker / idli mould for 25-30 minutes.

If you wish to bake it ,preheat the oven on 180degree Celsius & bake it in water bath for 35 min.
Let it cool completely before inverting it .




* Eggless option......you could skip eggs ,add 1tsp cornflour or custard powder to the warm milk and soak the bread in it..later proceed with the same method..

  13. I love this for a few reasons; the appearance, taste and as I was going in circles on what to do with the leftover bread slices, here it comes. Writing out the ingredients. Keeping my fingers crossed and hopefully I should be able to make. Probably will add pandan/screwpine juice for the green color.
