Caramel Bread Pudding is one such dish that's very close to my heart .I grew up eating this pudding Its been my favourite since childhood .This Caramel Bread Pudding was  staple in my house during school days I use to come home after school and Mom use to keep it ready .I loved to eat it while its still warm .Caramel Bread Pudding is easy to make a day old bread works well for this ,you can use fresh as well .This is a classic recipe which my mom my grandmom have been following .A simple easy doable recipe which requires no condensed milk. Just Eggs ,Bread Milk and sugar is all you need

You can add colours and make layered pudding as well.This is simple recipe which can be done on stove top/pressure cooker. You could even check this yummy choco chip bread pudding which I posted earlier
Ingredients:
4 ladi pav loaves or 8 bread slices( a day old will work fine)
1/2 litre full cream milk
6 to 8 tbsp sugar
2 big eggs or 3 small *
dry fruits as needed (i used finely chopped almonds)
1 and 1/2  tsp vanilla extract/essence 
1tsp butter/ghee

Method:
Cut bread into pieces.

If using bread slices please trim the edges 

Boil the milk add the bread pieces, sugar and keep aside for 20 -30 min .

Meanwhile beat the eggs till creamy .

Add the essence, eggs mixture ,ghee/butter, nuts to the milk.

Grease the mould in which you are going to make the pudding add 3 tbsp sugar to it and keep it on very low flame till it turns light brown.

Carefully till the mould to let the caramel coat it from all sides.

Pour the prepared milk -bread mixture in the mould.

Here are three ways how you can make this ..

1) Heat a  tava/griddle place a stand/ring  over it and then place the vessel with pudding mixture cover it with another big vessel and cook till done .takes about 35 min to 40 minutes check if knife comes out clean ,or steam it 
  2)Steam the pudding in the pressure cooker ( without putting the whistle)for 30 to 35  minutes or until knife inserted comes out clean.
Take a pressure cooker and fill it with lil water. Keep a stand in it and now gently keep the mixture filled vessel on the stand. Remove the whistle of the cooker and let it cook for around 35 min
3)If you wish to bake it ,preheat the oven on 180degree Celsius & bake it in water bath for 35 min.
Let it cool completely before inverting it .

I prefer using loaves/pav for the pudding if using bread s;lices you can trim the edges 
Use full fat cream milk for better results.
I use around 6 to 7 tbsp sugar for the pudding you may add 8 tbsp if you like it too sweet .
You can add a pinch of nutmeg powder or 1/2 tsp of cardamom powder as well.
You can use chopped almonds, cashews or any nuts of your choice 

I just put few drops of green colour and stirred it well from top if you like colourful puddings you could mix the colour in the milk mixture itself .

I love this for a few reasons; the appearance, taste and as I was going in circles on what to do with the leftover bread slices, here it comes. Writing out the ingredients. Keeping my fingers crossed and hopefully I should be able to make. Probably will add pandan/screwpine juice for the green color.
