Basbousa is a middle eastern sweet made from semolina .Its a very easy and delish semolina/sooji cake which is then soaked in sugar syrup.I was thinking of making this since long finally made this on my birthday.It was super yummy and we all loved it so much that it got over in a jiffy.Do try this and amaze your family members and guests.

Ingredients:
1 1/4 cup semolina/rava/sooji
1/2 cup flour/APF/ maida
3/4 cup milk
1 egg * Vegetarians can add 1/4 cup yogurt/curds instead.

1/2 cup powdered sugar
1/2 cup butter
1 tsp baking powder
1/2 tsp almond essence
20 almonds

For the sugar syrup
3/4cup sugar
3/4cup water
2 tbsp lime juice
1 tbsp rose water
few strands of saffron/kesar

Method
  • Mix the flour ,baking powder and semolina and powdered sugar.
  • Melt the butter and let it come to room temperature.
  • Mix the egg with melted butter and  milk.
  • Add the almond essence to the milk mixture .
  • Mix the flour to the milk and butter mixture .
  • Let it sit for 10-15 min.
  • Pour it 8 inch greased pan .
  • With the knife score/pre cut the batter into diagonal shapes and place blanched almond over every cut.
  • Bake for 35-40 min in preheated oven at 180 degree.
  • Meanwhile prepare the sugar syrup by boiling together sugar water and lemon juice for 10 min.
  • Then add the saffron and rose water and boil for 2 min s
  • Cut with the knife/Make score on the basbousa and pour the sugar syrup while its still warm.

Hi dear any option for almond essence...don't use rose water and kesar...can I make it without these two...and one more thing...should I pour the full sugar syrup on it or only few tablespoons...help

Yes fine works best.

There's no need for string consistency.. Just let it boil for 8 to 10 min then add rose water and boil for another 1-2 min

Yes u can skip kesar but add rose water if possible it gives a nice aroma and tastes really good. Almond essence can be substituted with vanilla or any other essence u want.. All the syrup has to be poured over..

First I must ask, you mentioned you made this for your birthday. Did I miss your birthday??? If so, I'm sorry...I hope you had a wonderful time:)

I have never heard of Basbousa before but it looks delicately lovely. It reminds me of something I have had before but I don't remember what it was called. Turkish friends of mine made it for me long, long ago. They may have used honey. I would love to try and make this Gloria, so I will be saving it for "some day." It doesn't taste sour..the.sugar syrup gets soaked in the cake making it soft and moist

Hi dear,
I don't know much about microwave baking...but if u bake cakes in it you can surely bake this..if its convection microwave..n you can try it in the pressure cooker as well
