Red Velvet Cupcakes Recipe/ Red Velvet Cupcakes with Cream Cheese Frosting.

 These little red velvet cupcakes are real  beauties....Perfect for Valentine's day..Red Velvet cake was in my list since so long So tried making these cupcakes first..they were simply yummy..I made a small batch of these cupcakes just for trial by dividing the recipe into half..I was happy that i chose this recipe from here,.It gave me perfect results.The cupcakes  were moist fluffy and had tender crumbs because of the addition of buttermilk
Will be trying them again but using beet next time I really didn't like so much colour going in..

Ingredients 
125 gms/ 1 1/4 cup cake flour*
1/4 tsp baking powder
1/4 tsp salt
1 tbsp cocoa powder
1/4 cup butter
3/4 cup sugar**
2 eggs
1/2 tsp vanilla extract
1/2 cup buttermilk***
1 tbsp liquid red food colour
1/2 tsp white vinegar
1/2 tsp baking soda

for the frosting
227 cream cheese at room temperature
60 gms powdered/icing sugar
1/2 tsp vanilla extract
2/3 cup heavy whipping cream/double cream ( i used non dairy )


Method

  • Preheat the oven at 180 degree Celsius for 10 minutes
  • Sift together flour,cocoa and baking powder.
  • Beat sugar and butter till fluffy and creamy ,add egg vanilla and continue to beat.



  • To the buttermilk, add the red food colour and whisk.
  • Mix the buttermilk mixture to the eggs and butter  and beat till its well incorporated.
  • Fold in flour or beat on very low speed till its mixed.
  • In a small bowl mix vinegar with baking soda..allow it to fizz then add to the batter and whisk.
  • You have to be quick when you add the vinegar .




  • Divide the batter into 12  lined muffin cups
  • Smooth the tops with a spatula or back of spoon
  • Bake for 18-20 minutes or  till the toothpick inserted comes out clean.
  • Allow the cupcakes to cool completely before frosting.




  • Beat the cream cheese with the sugar and vanilla
  • Gradually add the whipped cream and beat till soft peaks are formed.
  • Pour it in a piping bag fitted with a star tip and decorate over completely cooled cupcakes.
  • You may save some crumbs to decorate over the frosting ,I have used sprinkles.

Notes
*To make cake flour simply remove 1 tbsp of flour and substitute it with cornflour
**I have added powdered sugar,granulated sugar which i powdered ,to the butter while making cupcakes.
***To make buttermilk ,add 1 tsp vinegar/lime juice to the milk ,keep aside for 5 minutes then use.
Use a nice brand of whipping cream which can hold peaks quickly ,or beat the cream seperately then fold it to the cream cheese mixture.
