Battenberg is a traditional British Tea Time Cake .Battenberg is believed to have named in honour of the marriage of queen Victoria's granddaughter to Prince Louis of Battenberg in 1884 (source wiki) . Colourful and delicious Battenburg/Battenberg cake is sandwiched with jam and covered with Marzipan.This soft and delicious almond tea time cake is also called Battenberg Sqaure
Battenberg or checkerboard cake is a classic Tea time cake which is so pretty and delicious too .We often bake this on Easter alongwith Simnel Cake But recently made it for my Mom's Birthday .Thought of sharing it on my blog's 7th anniversary which fell on the 9th this month but somehow it got delayed.
Though it takes a lot of patience to make this beautiful cake it is quite easy .I have used my no cook

ingredients
150 gm all purpose flour/maida
180 gm butter
180 gm powdered sugar
70 gm almond flour
3 eggs
1 1/2 tsp vanilla essence
pink and yellow food colour/gel colour
1 tsp baking powder

1 cup jam
Method
Grease a 8 inch square baking tin and line it with parchment ,use a thick cardboard covered with aluminium foil to divide the baking tin into two equal halves.
Sift flour,baking powder together.
In a bowl cream butter and sugar together with a whisk until fluffy.
Add vanilla essence and eggs one at a time and beat well until the mixture is creamy.
Add almond flour and sifted flour,beat on lowest speed or fold in with a spatula till well mixed.
Divide the batter equally into 2 parts.
Add tiny drop of pink in one and yellow food colour in the other part and mix with spatula.
Pour the batter in the prepared baking tin.
Preheat the oven at 180 degree Celsius for 10 minutes.
Bake for 35 to 45 minutes or until toothpick/skewer inserted comes out clean.
Allow the cake to cool completely.
Trim the edges and top of the cake cut the into half lengthwise
In a saucepan take jam and heat on lowest flame
Apply the jam with a brush on the sides and top of the cake so that the cake sticks well.
Place one side of the cake upside down to give chequered effect.
Roll out marzipan placing it between 2 parchment paper .
Cover the cake with the marzipan .
Trim off extra marzipan .
Keep the cake in the refrigerator for an hour.
Slice it to reveal the beautiful square /chequered pattern.
Serve and enjoy with cup of Tea/coffee or as it is.
