Chocolate Cupcakes with Strawberry Whipped Cream Frosting


Inspired by my dear Suhaina I made these cute little cupcakes for my wedding anniversary .The best no fail recipe adapted  from here.These were the best chocolate cupcakes ever covered with strawberry whipped cream which went perfect with it..I also made one 6 inch chocolate cake and covered with strawberry whipped cream. Do try these yummy cupcakes you'll love them .

Ingredients:
for the cupcakes
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup  Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup  oil
  • 1 tbsp vanilla extract
  • 1 cup boiling water


for the whipped cream frosting
1 cup whipped cream
1 tsp strawberry essence
2 tbsp icing sugar
 color
 Method:
. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.
 Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes
. Stir in boiling water (batter will be thin).
 Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 180 degree Celsius. Fill cups 2/3 full with batter. Bake 22 to 25 minutes.or until wooden pick inserted in centre comes out clean Cool completely. Frost.
Makes About 30 cupcakes.
Beat the whipped cream with icing sugar till soft stiff peaks then pipe it over the cupcakes.

I used powdered sugar... Just powdered the normal sugar.. Yes you can half this recipe..

Hi dear I tried this recipe without frosting...it came out really well...but after it cool down the top layer if the cake became very sticky and started sticking to the hand...please tell me why...because I want to make these cupcakes for my sons birthday to give the children in the school...so I will make it one day in advance....please I don't know what to do...by next day it will become sticky...please help as soon asossible ...

Or can you give me some other recipe for chocolate cupcakes that will be as soft and fluffy as these but not sticky on top after cooling...because I don't want to frost them as I am making a day in advance..and will be messy in school please help

It's sticky because these are moist cupcakes.. You could try my every day chocolate cake recipe for soft and fluffy cupcakes.. It will be like brittania cakes soft ones

How many cupcakes will that recipe yield....and one more thing can you tell me if I can use your eggless moist cake recipe...for making cupcakes and will this recipe give me again wet top on cupcakes after cooling...

If I try your everyday chocolate cake...how many cupcakes will that recipe yield and I will make it one day in advance so will this remain soft and fluffy next day without the top becoming wet...and how much time do I bake it....and how do I store it to keep it fresh without any problems...I normally put in a container and cover it and keep...so should I leave it open whole night...please help I know too many questions..please help waiting for reply...god bless

It should yield about 20-25 cupcakes.. You can bake it for 35 to 40 min as for the cake it takes exactly 55 to 60 min..no the everyday chocolate cake will be soft and fluffy not wet..you wait for it to cool completely on room temperature before storing it..
