Pineapple peel wine.Easy homemade pineapple peel wine that taste so good.We usually discard the peel but this wine is made from the peel and unlike the other wine this one gets ready to consume in just 2 weeks.Since Christmas is just few days away im sure you all must be busy with shopping cleaning and some of  us must have even started preparing sweets.This Christmas add this wine to your list and enjoy it with your fruit cake. 

Homemade wine is actually easy to prepare and you just need 4 ingredients and some points to remember check notes for the same , This golden coloured pineapple wine taste really good do give it a try

peel of 1 pineapple
4 cups water boiled and cooled
1 and 1/2 to 3/4 cup sugar*
4 cloves
1 inch Cinnamon
1/2 tsp instant yeast
1 egg white lightly beaten (i didn't use)


  • Wash the pineapple well ,then cut the peel with a peeler 
  • Discard the crown
  • We just need the peel
  • Take  a glass jar or a bharni/ceramic pot  and add water sugar,yeast  peel and core
  • Stir and cover the jar with a cloth and loosely put the lid
  • Keep it undisturbed for 3 days
  • On the 3rd/ third day strain the mixture,you will get a strong yeast/fermented smell this indicates the wine is brewing.
  • Use a strainer and line it with muslin then Strain the liquid discard the peel etc
  • Add clove and cinnamon to the strained liquid and put the liquid back in the ceramic jar and cover the jar with a lid and place a cloth over it and tie it with a piece of cloth/string.
  • Keep it in clean dry place for 10days
  • the wine is ready to consume after 10 days its time to decant the wine,you can pour the wine in clean sterilised bottles and enjoy it right away or
  • You can keep it for longer ,the longer it stays the better it tastes.

  • Wash the pineapple before peeling it.
  • Use clean sterilised bottles/glass jar
  • I use a 4 litre bharni to make this and i wash it well and sun dry it well.
  • Wipe the ceramic jar/bharni clean and dry before you mix in the wine .
  • Preferably use a wooden spoon to mix the wine on the first day when you stir the ingredients.
  • Keep the jar/bharni in clean dry place
  • *I have adjusted the sugar and water according to my experience after trying the original recipes,if the pineapple is too sweet 1 and 1/2 cup is perfect if its less sweet you can increase the sugar to 1 3/4 to 2 cups or 3 cups add 1 1/2 cup on the first day ,taste it on the third day when you strain the peel if its less sweet you can add at this time .
  • The liquid will look cloudy as we are not using egg white ,you can add it for a clearer liquid
  • I have never used egg whites the liquid gets clearer as time passes by ,you can add beaten egg white while mixing the peel and other ingredients.
  • this yields around 1 litre

Carrot and Date cake..a soft moist and delicious cake that taste simply yumm..Made this  amazing cake few days back and it was well received by all.Since there is  nip in the air I added spice powders which took this cake to  a whole new level..made it flavourful and delicious and gave that festive feel.

You can make this with wholewheat flour as well I took 1:1 ratio of whole wheat and refined flour..this cake can be enjoyed with a cup of coffee or a glass of wine..Its simply amazing..Do give this a try ..I'm sure you gonna love it.
no sugar carrot and date cake

200 gm seedles dates
50 gm.walnut
1 1/ 2 cup carrot grated (i used around  3)
2 eggs
100 gm butter
2 tsp oil
1 tsp baking  powder
1/ 2 tsp baking  soda
1/2 cup water
1 1/2 cup flour *(i used 3/4 cup flour 3/4 cup  whole wheat flour)
2 tsp honey
1 tsp cinnamon  powder
1/ 4 tsp all spice  powder/garam Masala  powder.

  • Mix dates and baking soda in hot boiling  water and keep aside for 30 to 45 min
  • Mix walnuts  with  2 tbsp  of the flour
  • Sift baking powder  flour  cinnamon powder and all spice powder and keep aside

  • Line  a 9 by 5 inch loaf pan with  parchment or butter paper
  • Preheat oven at 180 for 10 minutes  and beat till combine
  • Blend  the dates  in a mixer  or with  hand blender
  • In a bowl  beat  eggs till fluffy
  • Add softened  butter  and whisk
  • To this add the dates  mixture and beat till combined
  • Add the grated carrot and beat till mixed
  • Now add vanilla ,oil and honey and mix well.
  • Fold in the walnuts and mix well
  • Fold in  the sifted  flour  in 2 to 3 addition  and mix well with   a spatula
  • Pour the batter in the prepared  cake tin
  • I also used 2 muffin liners  .

  • Bake for 45 to 55 minutes  or until skewer inserted comes out clean.
  • Cool it t on wire rack and enjoy it with cup of coffee or glass of wine.

You can replace  eggs with  1/2 cup buttermilk (thats 1/2cup milk mixed with 1 tsp vinegar or lime juice)
This  can be made with wholewheat flour too.
You can add raisins or any nuts you  prefer
