Tutti Frutti Cake is one of most popular tea time cake especially in India. We all do have fond childhood memories with Tutti frutti cake.Soft and studded with Tutti frutti/Candied peels this delicious tea time cakes were very popular and served as snack .Tutti Frutti Cake makes the best tea time cake and can be served as snack too . Enjoyed by Kids and adults alike this tutti frutti cake happens to be  a favourite of many .

Tutti frutti cake has the correct sweetness and is soft, spongy with delicious flavours and a lovely crumb. I love my tutti frutti cake  with little dry fruits ,finely chopped raisins and cashews give this tutti frutti cake a lovely flavour .

1 cup all purpose flour/maida  
1/2  cup tutti frutti/candied peels 
10-12 cashews chopped finely 
1 tbsp raisins chopped finely 
1/2 cup/113 gm  butter softened 
1 cup sugar (powdered)
2 eggs plus 1 egg yolk *
1 tsp baking powder
1/4 tsp strawberry or pineapple essence 
1 tsp vanilla essence 
2 tbsp milk

  • Pre heat the oven at 180 degree celsius for 10 min
  • Sift the flour .baking powder together and keep aside.
  • Dust the tutti frutti and nuts with 1 tbsp flour and keep aside .
  • Grease the cake tin and line it with parchment/butter paper.
  • In a bowl using a whisk,hand beater beat the butter and sugar till creamy.

  • Add in egg one at a time  and beat well till pale, light and fluffy 
  • Add in the essence and mix well.
  • Mix in milk and whisk to combine. 
  • Now fold in the sifted flour and mix well with a spatula .
  • Then add the tutti frutti and chopped dry fruits and mix.
  • Pour the batter in prepared cake tin and bake at 180 degree Celsius for 45-50 min or till toothpick/skewer inserted comes clean.
  • Allow the cake to cool in the baking tray for  15 minutes. 
  • Unmould the cake on the wire rack after 15  to 20 minutes.
  • Let it cool completely before cutting.

I have used 2 eggs and 1 yolk ,you can skip the yolk and add 1 tbsp milk powder instead with the flour.
Dust the raisins,cashews and tutti frutti with flour .

You can use 1 1/2 tsp vanilla essence alone and skip the pineapple/strawberry essence.

Right from childhood Diwali has been my favourite hindu festival I love the feel of this festival the lights the sweets everything in it. And being a foodie how will I miss the mouthwatering delicacies prepared .I too make it a point to prepare something sweet and some savoury items to celebrate diwali ..After all we are Indians right and i love being Indian for this reason that there's no country in the world which clebrates every festival with the same spirit ..Be it Christmas  Eid,Diwali Holi we celebrate eveything with lots of joy .
I would love to wish my friends ,readers and everyone a very Blessed and Happy Diwali . May this festive season illuminate your life with love joy and peace .I am sharing one of my favourite seet with you all ..I know I say this in every sweet i post hehehe But I love sweets and I just can't resist.
Making Kaju Katli at home is very simple you just need to remember few things and you will never fail .I have tried 3 -4 different methods but found this one the most easiest and quick than the other.

1 cup cashew
1/2 cup sugar
1/4 cup water
1 tbsp milk
1 tsp ghee
few strands of saffron/kesar.

  • Grind the cashews to a fine powder .The powder should be fine..Don't over blend the cashews or it will start releasing oil.
  • Sieve the powdered cashew and keep aside.
  • In a non stick pan/ kadhai take sugar and water and place it over the gas on a medium flame.
  • Stir so that the sugar dissolves . mix the milk and the saffron .
  • You will see bubbles appearing and soon you will get one thread consistency.
  • Let it boil further more for few sec then add the cashew powder and ghee and continue stirring .
  • Continue stirring till it leaves the sides of the pan ,it will take few minutes seconds so keep an eye.
  • You will see dough is formed switch the flame off and continue to stir .
  • Remove the mixture over a greased thali or on a butter paper.
  • Take a big butter paper and keep the dough inside it cover it with the other half of butter paper and roll it thinly with a rolling pin.
  • Using a sharp knife cut into diamonds shape and enjoy homemade kaju katli
bring the cashews to room temperature  before grinding it.
the grinder should be clean and dry.
The flame  will remain low /medium low .
You can also add a pinch of cardamom powder while the sugar is been dissloved.
You can also add the cashew powder right after you get the one thread consistency but then you will have to knead the dough once you take it out .
I havve tried doing so but prefer this method to wait for 2-3 seconds after you get the one thread consistency adding cashew powder fastens the cooking process and you  dont have to knead ity to a dough .
You just got to put it over the parchment/butter paper and roll it thinly.
If you wish you could knead the dough and if the dough hardens add few drops of milk or ghee and knead but i didint have to knead.

This festive season why don't u try making some eggless whole wheat cookies which are
so simple to make and they just melt in your mouth..I have never tried baking with whole wheat flour before so I thought of trying  small batch of  whole wheat cookies .To my surprise  the outcome was delish and we simply loved it...
I added cornflour to get that melt in mouth effect .If you wish you can use half cup flour and half cup hole wheat flour.You can garnish with pista or any other nut you prefer.I used almonds as I like the flavor of roasted almonds.

1 cup whole wheat flour/atta
1 tbsp cornflour
1/2 cup/100 gm butter
1/4  cup plus 1 tbsp powdered sugar
1/2 tsp cardamom powder
1/2 tsp vanilla extract (optional)

Sift the whole wheat flour and the cornflour together and keep aside
In a bowl whisk the butter and sugar till creamy.
Add vanilla extract (if using) and cardamom powder
Mix in the sifted  flour and mix till its well combined.
The dough will be soft.
Shape into small balls and press the chopped nut on the cookie.
Place the cookies on baking tray lined with parchment/foil.
Pre heat the oven for 10 min at 170 degree Celsius
Bake for 15- 20 min.
Remove and let it cool on a wire rack.
Store in airtight container.

Enjoy this crispy chicken burger in the comforts of your home..no MSG no preservatives make crunchy crispy chicken home you will never eat burger form out.I have posted beef burger some months back  .I have used simple burji  buns which is already posted in the blog   .You can use hamburger buns .I enjoy eating burgers with my fav honey mustard sauce and just little tomato ketchup .You could  use mayo or any sauce you prefer.
 hamburger burger buns /buns
crispy chicken 
honey mustard sauce as needed
tomato kethcup as needed
lettuce leaves

Grill the burger buns .
Place the cheese slice on the burger bun and top it with tomato ketchup and honey mustard sauce.
Place lettuce leaves on top of the crispy chicken.
Cover it with the half grilled buns.
Serve it immediately.

 Fried Chicken is everyone favourite and if its crispy fried its finger licking good right?Tried to replicate the famous fried chicken and was happy with the outcome.It was scrumptious and indeed finger licking good.Why go out  when you can easily make this yummy fried chicken at home..Serve it with  dip of your choice or use it as patty for burger Its just too yumm
500 gms chicken breast
1 .5 crushed tsp black pepper
1.5 tsp chilli sauce
1 tbsp lime juice
for the batter
1 egg
4 tbsp cornflour
4 tbsp maida/plain flour
1 tbsp baking powder
1 tsp crushed black pepper 
1 tsp oregano
1 tsp garlic powder
 cold water

1/2 cup maida/flour
oil to deep fry

  • Cut chicken breast into thin slices and flatten chicken breast with meat hammer.
  • Apply salt,lime juice, black pepper ,chilli sauce to the chicken and marinate for 45 min -1 hr.
  • In a bowl Mix flour,cornflour,baking powder,salt,pepper,garlic powder ,oregano egg, cold water and make batter shouldn't be very thick nor too thin.
  • In a plain take plain flour/maida and keep aside.
  • Dip the marinated chicken in the batter then with the other hand roll it on the flour .
  • Dust the excess flour and deep fry in hot oil over medium flame till golden brown.
  • Serve with dip/sauce of your choice.

One of my favourite dessert  Creme Caramel/Caramel Custard/Flan is soft melt in mouth dessert made with milk eggs and sugar .This dessert is loved equally by kids and adults. You can make it in ramekins or could use mould too.

1 1/2 cup milk
1/4 cup sugar
3/4 cup sugar
2 tbsp water
1 tsp vanilla extract

In a heavy bottomed saucepan add 3/4 cup sugar and 2 tbsp water Place the  saucepan over low heat .once the sugr melts increase the heat to med and boil until it begins to caramelise.turning golden brown ..remove it from heat or it will continue to darken and may turn too dark or even burn.
Carefully remove (it or you may burn yourself )and pour it in the ramekins or mould.
In another saucepan heat milk ..dont let the milk boil..
Whisk eggs,yolk ,1/4 cup sugar  and vanilla together Whisk in  milk in few additions Strain through a fine sieve and stir in vanilla.  Pour custard in the mould or divide evenly among ramekins.
Prepare a waterbath by adding boiling water just to the level of the mould.
Place the ramekins/mould in the water bath and bake for 35 min at 160 Degree Celsius.
Cool at room temperrature for 30 min  then refrigerate for 3-4 hours.
To unmould  run a sharp knife around  mould/inside of each ramekins and invert onto a serving plate, gently shaking to release.
Enjoy creamy caramel custard chilled..
