Ingredients
140 gm maida /all purpose flour
2 tbsp cocoa powder
1tbsp cornstarch/cornflour
100 grams butter (softened)
80 grams powdered sugar
100 grams chopped cashew
1 tbsp milk
1/2 tsp vanilla extract
Method
Sift cocoa ,flour and cornflour together .
In a bowl take soft butter and add in powdered sugar .
With a whisk or beater beat well till it turns creamy and fluffy .
Add vanilla extract and mix
Add sifted flour and mix in half cashews.
If the dough looks crumbly add milk to bring it together mixing it with your hands.
Shape the dough into a log ,cling wrap it or can refrigerate it to shape later
I have shaped it into log hence I clinged wrapped the log and refrigertaed it for 2 hours ,you can refrigerate it for 45 min to overnight just before baking take the dough out 5 minutes ahead slice and bake..
Take the remaining chopped cashews and roll the dough to coat the cashews well.
Slice the dough into 1/4inch thick slices.
Line baking tray with parchment.
Preheat oven at 180 degree for 10 minutes
Bake at 180 degree Celsius for 18 to 20 minutes.
The cookies will soft but will harden as they cool.
Allow the cookies to cool on cooling rack.
Once cool store them in airtight container.

You can add any nuts of your choice.
The dough can be shaped into log and sliced like I did or rolled and shaped using a cookie cutter
Refrigerate the dough if baking in 2 batches
