Paneer Bhurji

I'm a hard core non vegetarian but somehow I dislike eggs ..So trying omelette,sunny fried and bhurji/scrambled eggs is a big no to me...I substitute the eggs with paneer and make bhurji to enjoy i with breads for breakfast. You can even add more veggies to this and can substitute tofu for paneer.Made this paneer bhurji for stuffing in my buns and I must tell you it tasted simply superb..This Paneer bhurji taste good  with breads/naans/chapati..


Ingredients:
200 gms paneer
2 med sized onions chopped finely
1 med tomato chopped
1 capsicum(optional)
3 green chillies chopped
1/2 inch ginger chopped
4-5 garlic cloves minced
1/2 tsp garam masala powder
1/4 tsp turmeric powder/haldi
1/2 tsp cumin seeds
1 tbsp finely chopped coriander leaves.
1 tbsp oil
salt to taste

 Method:
In a pan heat oil,add cumin seeds.
Add the chopped ginger garlic and onions and saute for 5-6 min on med flame .
Once the onions turn translucent add the green chillies and capsicum and saute .
Then add chopped tomatoes and cook till mushy.
Now mix in the garam masala powder,turmeric salt and the crumbled paneer.
Saute till everything is well mixed and dry.
Lastly add coriander leaves and serve hot with  bread/roti/chapati.
