400 gm Boneless Chicken cubed (i used breast piece)
1 tsp ginger garlic paste
1 tsp kashmiri chilli powder
1/2 tsp garam masala powder
1/2 tsp cumin powder
3 to 4 tbsp thick curd
salt
2 small onions sliced or 1 big roughly sliced
2 Tomatoes pureed
1/4 cup fresh cream
12-15 cashews
1tsp ginger garlic paste
11/2 tsp Kashmiri Red Chilli powder
1 tsp Garam Masala powder
1 tsp kasuri methi/dry fenugreek leaves
2 to 3 tbsp butter
1 tsp sugar /as needed
2 tbsp oil
2 bay leaves
Salt to taste.
Method:
Marinate the chicken with salt, ginger garlic paste,chilli,cumin garam masala powder ,curd and a pinch of red colour optional ,keep aside for 30 to 45 min.
Fry the sliced onions till brown and keep aside ,use the oil for frying the chicken.
Grind tomatoes ,cashew ,fried onions and the cream to a fine paste.
Fry the chicken till done adding little oil/you can grill them too .
In the same oil you use to fry the onions.
Heat oil and 1tbsp butter add bay leaves and the onion tomato paste.
Then add the chilli powder and saute .
Fry well till all the oil separates then add the fried chicken mix well cook on low heat.
Add 1 to 1 1/2 cup water or according to the consistency of the gravy you want
Then add the sugar , cream , kasuri methi crushing it with your palms.
Check for salt add if needed.
Add garam masala powder.
Cover and cook for 5 minutes
Add butter and drizzle fresh cream and butter before serving and garnish with some coriander leaves.
Enjoy hot with pulav,jeera rice or naan.

Frying the onion before making paste is optional,i prefer it like this.
use freshly ground garam masala for better results
honey can be added in place of sugar ,you can add according to your taste buds.
