Butter Garlic Knots/Eggless Butter Garlic Knots/Eggless Dinner rolls

Soft buttery garlic knots/dinner rolls are super delicious .These dinner rolls/butter knots are pillow soft and very tempting.A huge hit at dinner parties These eggless butter garlic knots are easy to prepare.serve them with soup or as an accompaniment with pasta or any gravy or just have it plain yuummmmm


As a kid i was always fascinated with the dinner rolls served in weddings or at any parties ,I loved the cute shape and always ditched the humble pav.😂😜.lol. The dinner rolls in those beautiful bread baskets always attracted me .Now since now i bake my buns/roll  and breads at home I'm not so keen to have them at parties ..These dinner rolls are must at my place specially when we have parties or get togethers..these are well received and loved by all..


Ingredients
3 cups refined flour/Maida/all purpose flour
1 tbsp milk powder
3/4 cup warm milk*
1/2 cup lukewarm water + /-
1 1/2 tsp active dry/instant yeast
1 tbsp sugar
1 tbsp butter
1 tbsp  +/_ oil
1 1/4 tsp salt

7 to 8 garlic cloves
1/4 cup coriander leaves
4 tbsp butter
1 tsp Sesame seeds

Method

  • Sift flour and add salt and milk powder.
  • In the lukewarm water add sugar and the yeast and let it sit till frothy.
  • In a bowl add the sifted flour to this add the yeast.
  • Add the warm milk and mix it till it comes together.
  • Add butter and oil and knead for 8 to 10 minutes.

  • Apply oil ,knead well till you get soft smooth dough.
  • Cover the bowl with a cling foil and allow it to double in size.


  • Once the dough has doubled in size ,knock the dough down and divide into balls 12 for medium size and 16 to 18 for mini rolls.
  • Roll each ball into a long elongated tube around 15 to 16 cm on a dusted surface
  • Make a knot and place it in a tray lined with parchment paper.
  • Repeat the same procedure for the remaining.Place the knots at a distance of 2 cm apart.



  • Cover the knots with a damp cloth or a loose cling foil and allow it to double in size.
  • Once they have doubled ,preheat the oven at 180 degree Celsius for 10 minutes.
  • In a bowl mix the softened butter ,minced garlic and chopped coriander leaves .
  • Brush the garlic butter on the dough and top them with sesame seeds.
  • Sprinkle little milk over the rolls.
  • Bake for 18 to 20 minutes at 180 degree.

  • It may take about 20 to 22 minutes or more depending upon your oven to get a lovely golden brown colour.
  • Once they are baked ,remove them out and brush some butter over the knots/rolls.

you can apply egg wash mixed in milk since they were eggless i didn't.
I use instant yeast but i always mix it in lukewarm water.
Use lukewarm water to prove your yeast,if the water is hot the yeast will die.
You can add 1 cup wholewheat flour instead but the softness wont be the same.
Each oven varies ,the buns may take around 18 to 25 minutes depending on your oven temperature.
Don't over bake to get brown colour on top else the rolls will turn hard .
Adding milk powder adds fluffiness to the dough you can skip it if you don't wish to add.
These rolls stay soft for 2 to 3 days if kept covered in an air tight container.
You can reheat them in  a microwave or on an oven at 150 degree for 8 to 10 minutes ,without preheating the oven.
If you just want to make butter knots you can simply brush butter and milk instead of the garlic butter.
Add 1/4 tsp salt to the garlic butter,check if the butter is not too salted.
